Memorial Weekend Fun & P90X Update

This memorial weekend the family decided to celebrate by going to the pool. We cooked some pizza and headed on over.
Ian was all set and ready to go with his dive gear on.
David's parents were hard at work getting fresh watermelon ready.
We also celebrated Annslee's birthday.
Fun was had by all and of course I brought some frozen margarita's in thermos type containers to the pool. I found a bubba mug that holds almost TWO pitchers of margaritas. That's nuts.
I got a new swim suit from Macy's that I love. The straps can do a variety of things. You can make it strapless like shown above or they can go halter or regular bra style.
P90X Update- WE ARE FINISHED with the program. Towards the end we would work out around 3 times a week instead of the 6, but still completed most all the scheduled work outs. I really love some of the workouts especially cardio X and ab ripper so I will pick and choose the ones I want to continue. I want to find something that's a little less time consuming though, 1 hour-1.5 hours a day is a bit much for me. Check out our summer beach bodies above. David wants to flex his muscles for the camera so I'll post that picture next week sometime. He lost a total of 20-25 pounds in the 4 months we've been doing it! We still need to get his body into the sun more as he is a similar shade to Casper the ghost.
All the girls are doing some sort of working out and are sporting their bikini's well.
Darrin and Stacey are also on P90X and still love the program.
Here is a better shot of Davids beach body (I keep saying that word b/c that's what Tony from P90X always says.) I really enjoyed the nutrition part of P90X. I loved learning what "good" foods are and how much protein matters. I think we will still continue to eat similarly as its working for us. Maybe I'll do a post on foods soon. Pin It

P90X Week 6 Update

It's been a while since I updated our progress on the P90X workout. I am happy to report we are still going strong with our workouts and eating plan. We are on week 6. So far, David has lost close to 20 pounds. I have lost 0 but have gained arm, leg and stomach muscles. I can even do some pull ups on the pull up bar. I like the workouts once I get going, but still feel sometimes that the hour-hour and 15 mins of workout is long. I will be ready for bathing suit season though! Starting at week 5 we were able to introduce whole wheat carbs so pasta and  breads here we come! I wanted to share with you a turkey meatloaf recipe that is on the meal plan. It is really good for you and tastes awesome!

Ingredients-
1/2 cup onions, diced
2 Tablespoons fat-free chicken broth, low sodium
2 Tablespoons minced garlic
1 1/2 lbs ground turkey
1/2 cup breadcrumbs
1/2 cup + 2 Tablespoons low-sodium, low-fat marinara sauce
1 Tablespoons basil (maybe a little more, eye ball it)
1 Tablespoon parsley chopped

1. Preheat oven to 350 degrees
2. Saute the oven in the chicken broth until lightly browned
3. Add the garlic and cook 5 mins more. Remove from heat and cool slightly
4. In a large mixing bowl, combine the onion mixture with the ground turkey, breadcrumbs, 1/2cup marinara sauce, basil and parsley
5. Form mixture into a loaf, shape and place in an ungreased loaf pant
6. Brush with remaining 2 Tablespoons marinara sauce and bake until cooked through, 45mins- 1 hour.
7. Drain off fat and let cool 20mins before cutting into slices.
I felt a bit ambitious on Sunday so I got 5lbs of ground turkey (easy to do at Sams) and made 3 meatloaves
And a bunch of turkey meatballs for spaghetti (whole wheat of course).

I also got a gigantic pack of chicken and marinated it with my favorite fajita marinade and grilled them up. I chopped them to save for chicken burritos and salads.
For snacks we can now have hummus with carrots, celery with peanut butter (I made ants on a log for the first time), and yogurt. Pin It

P90X Week 2 Update

We started P90X last week and have been going strong ever since (minus when I got sick and had to skip 1 day, but I made it up don't worry). The workouts are hard, even when we are half doing them because we are either lost or exhausted. We still burn a TON of calories though. David averages 900 and me around 400 per work out. Isn't that crazy? The week 1 results are in. David has lost between 3-5 lbs (we forgot to record what his before weight was) and I have lost 0-1 lb. I was stretching to give myself credit for 1. I am not trying to loose weight, just wanted to get more fit and toned.  I wanted to share some of what we've been eating. We love our protein shakes in the morning.
This is what our typical dinner looks like. Seasoned salmon with quinoa and brown rice and green beans. We rotate the meat with island pork tenderloin, lemon garlic chicken breasts and asparagus.
We get 1 carb/ grain serving per day and I choose to use the rice as mine. We found these microwaveable organic rice packets at Costco. They have 2 cups in them so they are perfect 2 portions. They are probably too expensive, but so worth the money since we work out after work and its usually around 7:30 before we eat dinner. I figured them out to be about $1.85 per bag ($7.40 for 4) so maybe they aren't so bad.
Here is the recipe for the island pork tenderloin. My meat was really thick so it took more like 45 mins to cook. It's really good though. Pin It

P90X Day is Here

This weekend, after seeing the results that Darrin and Stacey were achieving, we decided to start P90X. After work today we will start our workout videos. Mark your calendars!
We went out and bought what seemed like a million dollars worth of start up equipment which included fancy heart monitors
These come with straps to put on your chest, my monitor is pink!
We bought protein powder (from Costco) and Recovery Drink Powder to help with our workouts and to help with the soreness after workouts. I wish I had a picture of all of our food before we started putting it away. The first month you start doing P90X you focus on fat burning so you need a lot of protein. For the food plan this equals lots of meat and hardly any carbs. The good thing about this is you can eat cheese (not that I like cheese, but a lot of diets you have to cut that stuff out). I have no idea how I will last a month with hardly any pasta. You can eat brown rice, wild rice and Quinoa though.
We purchased a gigantic pork tenderloin from costco for $15 and it will yield 16 servings of Island Pork Tenderloin (I'll post recipe after I eat it). Sorry, I know raw pork is gross, but I wanted to show you how big it is.
Here is my mess while I portioned our pork out and seasoned it before freezing. This seriously could be a full time job, with all the cooking and portioning things out to make sure you are eating the correct foods.
We also purchased salmon, lunch meat (fat free), frozen strawberries, veggies, salad, cheese, rice, etc.. Here is what we are going to eat this week. Breakfast we are doing a protein shake made of skim milk, frozen strawberries, banana and protein powder. Oh, and did I mention that we got a magic bullet and it is AWESOME!! If you don't have one, you need to consider buying it, there are no dirty dishes, you blend in the cup you are going to drink with! Lunch will be a Cobb salad filled with a TON of lunch meat (ham and turkey), avocado, cheese, roma tomato and low fat dressing. Dinner will be salmon (already seasoned) with asparagus  and wild rice. The other nights will be Island pork tenderloin and turkey meatballs/burger (minus the bread). Sorry no before pics, because they aren't too pretty and we are half naked. Wish us luck! Pin It
